Yummy Dinner and Pregnant Pictures

Blogger flipped this picture, but either way it is WAY yummy and I had to share the recipe. We ate this at a RS meeting where we learned about preparedness. This was one of the dishes that you can use fresh ingredients or food storage ingredients and it's yummy either way.
SPINACH AND MUSHROOM QUICHE

Ingredients
• 6 slices bacon, cooked
• 6 eggs, beaten
• 1 1/2 cups light cream (I used milk and it still turned out great)
• 1/4 teaspoon ground nutmeg
• 1/2 teaspoon salt
• 1/2 teaspoon pepper
• 2 cups chopped fresh spinach
• 2 cups chopped fresh mushrooms
• 1/2 cup chopped onions
• 1 cup shredded Swiss cheese
• 1 cup shredded Mozzarella cheese
• 1 (9 inch) deep dish pie dough

Directions
1. Preheat oven to 400 degrees F (200 degrees C).
2. Place bacon in a large, deep skillet. Cook over medium high heat until evenly
brown. Drain, cool, crumble and set aside.
3. Saute onions & mushrooms in a bit of the bacon grease adding the spinach at the
end to wilt. (Removes much of the moisture to prevent the quiche from become
runny.)
4. In a large bowl, whip together eggs, cream, nutmeg, salt, and pepper. Stir in
bacon, spinach, mushrooms, onions, 3/4 cup Swiss cheese, and 3/4 cup
Mozzarella cheese. Pour into unbaked pie shell. Top with remaining cheese.
5. Bake uncovered for approximately 35 minutes, or until bubbly and lightly
browned. (Tip: Cover the edges of the pie shell with foil to prevent burning,
remove during final 10 minutes to achieve a golden crust.)
6. Tip: Allow quiche to cool at least 10 minutes before cutting.

Most ingredients may be decreased or increased to taste preferences
May be baked as a crust-less quiche in a 13 x 9 casserole dish: increase eggs to 8,
bake at 375 degrees for 35 minutes
I have used 2% milk in place of light cream with good results.

Food Storage Notes
All fresh ingredients can be easily substituted or combined with food storage ingredients.
e.g. bacon bits, egg powder, instant milk, and freeze-dried spinach, mushrooms, onions,
and cheeses

Then this is just for fun a d for all of you who haven't seen me for a while.
Looking at this picture makes me think I look a lot more pregnant than I think I do.....I guess that's a good thing.

Nursery: Part 1

So far I have finished the bedskirt, curtains, and a wall-hanging for the nursery. However, I have only been able to get a decent picture of the wall-hanging but I will include a bad picture of the curtains, the bedskirt will have to wait until we have a mattress to go in the bed.This is the first of the hanging. I added pinwheel flowers to the end, because that's what I'm using to tie the whole thing together.
This is the whole thing. This is actually a project for an online class I am taking from here.

Then there is the bad picture of the curtains. I couldn't get a good one because the lighting in that room is really terrible. Hopefully that means the baby will sleep better......I know you can't tell from this picture, but the top is the green fabric, and the ties are red. So are the pinwheel flowers on the top.

There will be more to come, but I don't know how soon since my house is SERIOUSLY suffering from my lack of attention to it.

What I have been up to.....

When my friend Megan was pregnant we both talked about how it seems like you can't find the great nursery decorations anymore. She was debating how to decorate her nursery and we both decided we would probably make our own everything. So when she did it and it turned out to be one of my favorite nurseries ever, I decided I definitely would do it to.

This is the fabric I am using for the nursery. It is still a WORK IN PROGRESS with bright yellow tape on the door, but hopefully it will come together well.

And the winner is.......

Ever since we went on a trip with my family I have been wanting pulled pork. So I got the recipe from my sister and stuck the pork roast in the oven all day yesterday. Today I didn't feel like shredding it, so Bryan is. Hence, Bryan is the winner of the Best Husband Award! Thanks, babe for being so great.

Yep, you got it, this is our 20 week ultrasound where they tell us what the sex of our baby is. We are having a healthy baby...............................................
......................................................................GIRL!!!!!!!!!!!!!!
Now you know.

Bryan is asking that I have the doctor double check when I go in on Monday, but let's just say, I'm pretty sure the answer is still going to be just the same.
